Strawberry-Honey Lemonade is a riff on classic strawberry lemonade made by combining fresh strawberries, lemon juice, honey, and water in a blender, then straining out any solids. Refreshing and nonalcoholic, this drink offers pink lemonade nostalgia while packing a real punch of strawberry flavor.
In lieu of granulated sugar or simple syrup, honey serves as the sweetener, adding a depth and floral sweetness that pairs well with the strawberry. While honey can sometimes be difficult to blend into drinks or cocktails since it firms up in cold temperatures, the power of a blender helps break down the sticky-sweet ingredient.
The combination of lemon juice and fresh strawberries offers bright fruity flavor and lots of freshness. The honey mellows out the tart lemon and brings out the sweet notes present in the strawberries.
While this drink is delicious on its own served chilled or over ice, it can also be spiked with vodka or gin to make a simple, flavorful cocktail.
How to Make Strawberry-Honey Lemonade
This simple drink is all about combining high quality ingredients. The honey’s floral and caramelly notes pair well with the tart fresh lemon and strawberries. To tailor the sweetness level of the lemonade, increase or decrease the amount of honey to taste. Riper and/or in-season strawberries will yield a sweeter lemonade, so taste the fruit in advance of blending.
For sparkling lemonade, follow recipe instructions through blending and straining the strawberry mixture, then substitute 4 cups of club soda for the remaining water. Make this lemonade up to three days in advance and store it covered in a pitcher in the refrigerator. If using sparkling water instead of tap water, add it just before serving.
