Roasted salmon tossed in a lemony honey mustard dressing, served over fluffy rice with crispy bacon, and finished with browned garlic herb butter, fresh greens, and a generous sprinkling of spring herbs. Colorful, delicious, and surprisingly simpleâa new go-to weeknight dinner!
Happy Monday, everyone! I hope everyone had a wonderful Easter weekendâspent some time outside, caught up with family and friends, and enjoyed some seriously good food. Iâm so excited to be back in the kitchen today, with plans to cook up lots of fresh spring dishes!
Lately, Iâve been all about spring recipesâanything bright and fresh, packed with vibrant greens and herbs. And salmon has been on repeat. This bowl was a big hit. Itâs absolutely scrumptious and so easy to throw together!
The salmon roasts right on a sheet pan with the baconâso itâs a mostly hands-off recipe too (win-win!).
And before I dive into the finer details, Iâve got to sayâIâm having a major honey mustard moment this season. Itâs become one of my favorite spring and summer dressings, which is kind of wild because it is not a dressing ever used to cook with. But here we are: honey mustard, salmon, and bacon. So good. So addictive!
These are the details
Ingredients
- salmon – do your best to find wild-caught
- onion powder, garlic powder, and chili powder
- bacon – get a thick cut with no sugar added
- salted butter
- garlic
- a jalapeño
- fresh basil or parsley – we love both
- Romaine lettuce – arugula would be just as good
- cooked rice – I love jasmine made with bone broth
- fresh dill

- mayo
- dijon mustard
- honey
- lemon juice
- chipotle chili powder
- cayenne pepper
- salt

Steps
Step 1: cook the salmon and the bacon
I start with the salmon. Instead of cooking on the stove, I prefer to roast the salmon cubes on a sheet pan. First, toss the salmon with onion powder, garlic powder, chili powder, and season with salt and pepper. Now, arrange the chopped bacon around the cubes of salmon.
As the bacon cooks, the fat will render, allowing the salmon to cook wonderfully alongside. After 10-15 minutes, the bacon should be crispy, and the salmon should be cooked with a nice crisp top. So delicious!
If you prefer to omit the bacon, that’s fine too! Use oil or butter to help the salmon cook nicely and prevent sticking.
Step 2: the honey mustard
While the salmon cooks, make the homemade honey mustard. You might not think itâs worth the effort, but itâs far superior to the store-bought. Itâs very creamy and easy to make, just mayo, Dijon mustard, honey, chipotle chili powder, cayenne pepper, and salt.
Whisk everything until creamy â super easy. Plus, you control the ingredients, so there’s nothing funky in your dressing.
Step 3: toss the salmon with the honey mustard
When the salmon is done cooking, add a few spoonfuls of the honey mustard and toss it up.
Step 4: the garlic butter
A few tablespoons of butter, browned with garlic. Then add a jalapeño for spice and top with fresh herbs, I use basil and parsley.
Step 5: serve
Serve the chunks of crispy salmon and bacon over bowls of rice and fresh greens. I used romaine, but I’ve since been using arugula, and I think I love it even more!
Then add some of the brown butter and don’t forget extra honey mustard too! Plus dill, which I think is so nice with salmon, bacon, and honey mustard! YUM!
Totally delicious! This will be great for the warmer spring and summer days ahead.

1. Preheat the oven to 450° F. 2. On a sheet pan, add the salmon, onion powder, garlic powder, chili powder, salt, and pepper. Toss the salmon to coat. Arrange the bacon around the salmon. Taste and adjust the salt. Toss the salmon chunks with honey mustard4. In a skillet, melt the butter over medium heat. Add the garlic and allow the butter to brown around the garlic. Remove and mix in the jalapeño and basil or parsley. 5. Serve the salmon over bowls of lettuce, rice, and dill. Drizzle everything with garlic butter, then add additional honey mustard. Enjoy!
