It’s constructed with a center layer of aluminum and a top and bottom layer of stainless steel for three total layers. During our tests, we found that the aluminum core conducted and maintained heat incredibly well no matter what we cooked in it, from chicken piccata to eggs. The stainless steel surface is sleek and sears foods beautifully, too. 

It’s also incredibly durable, showing no dramatic signs of wear and tear during our shock tests or cinder block tests. (Yes, we hit this pan with a cinderblock.) Because of these factors, we’re certain the skillet is a long-lasting investment, and can last a lifetime with proper care.
