We all love an easy one-pot dinner, especially when it’s something that our families enjoy as well. Who wouldn’t want a family-approved meal with minimal dishes? It seems like even royals are in the same boat, with Meghan of Sussex sharing a quick and easy one-pot meal that her whole family loves.
In the first episode of her new Netflix series With Love, Meghan, she shows viewers how to make her go-to meal, an easy one-pot pasta that looks absolutely divine. The dish requires a handful of ingredients, including cherry tomatoes, garlic, spaghetti, kale, arugula and parmesan, plus staples like salt and olive oil.
To make the dish, she starts off by cutting the tomatoes and adding them to a large skillet with olive oil before seasoning with salt and garlic. She then makes a move that has proven to be slightly controversial among viewers, adding the uncooked spaghetti directly to the skillet. Some viewers claim that the technique is a “punishment to pasta,” but there’s no need to fret, as it gets cooked perfectly once she covers the ingredients with about 3 ½ cups of kettle-boiled water.
“You put the dry pasta in, you pour boiling water on top, and that’s it,” Markle says, emphasizing the simplicity that comes along with this unique cooking method. Though it might not be traditional, we think it’s a pretty smart way to cut down on the number of pots and pans that need to be washed.
After about six minutes, Markle adds in the kale and arugula and allows the greens to cook for a few more minutes before topping with grated parmesan and red pepper flakes for a bit of heat. Once the pasta is al dente, it’s ready to go. She serves the dish garnished with some more grated parmesan and fresh basil for an herby kick.
All in all, the dish ends up having a beautiful appearance, with pops of color from the greens and juicy tomatoes. We definitely can’t wait to give it a try.
