Jennifer Garner’s 5-Ingredient Breakfast Is Even Better Than Her Scrambled Eggs

If your New Year’s resolution is to eat more protein, spend less time in the kitchen, or cook more of your celebrity’s favorite recipes, you’re in luck because the latest episode of Jennifer Garner’s “Pretend Cooking Show” checks all three of those boxes. 

The first few weeks after the holiday season can be tough to get back into the swing of things. Maybe you’re headed into the office for the first time in weeks, the kids are back to school, and the holiday leftovers are finally clearing out of your fridge. So, if you’re looking for a quick breakfast that you can make ahead with just five ingredients and heat in the microwave later, Garner’s easy egg bites are the perfect solution. 

“It’s nice occasionally to just have something protein ready,” Garner says in the video. 

As big fans of Starbucks’ egg bites, we know how delicious and easy the protein-packed breakfast can be. And while you could buy them from the coffee shop—or grocery storemaking egg bites at home is easier than you’d think, and they’re fully customizable.

How To Make Jennifer Garner’s 5-Ingredient Egg Bites

Garner’s egg bite recipe comes from food blogger @lovelydelites and features eggs—she uses a mixture of whole eggs and egg whites—cottage cheese, mozzarella, red bell peppers, spinach, salt, and pepper. 

She adds her egg and egg white mixture, grated mozzarella, and cottage cheese to a bowl—but not before giving the curds their well-deserved flowers. 

“I’d like to take a moment to congratulate cottage cheese on having a major year. Way to make a comeback, cottage cheese,” Garner says.

Then, she mixes it all together with her KitchenAid (of course) hand mixer until there’s “some floof.” 

When the egg mixture is ready, she chops up fresh red bell pepper and spinach—and she says you could also include bacon or ham here or any other ingredient your heart desires. Then, Garner divides the fresh veggies into a greased muffin tin and tops each one with the whipped egg mixture and finishes them with salt and pepper. 

Garner’s method calls for a water bath to mimic sous-vide style cooking and provide a lighter texture. It’s the secret to making copycat Starbucks egg bites at home, too, so you know it’s going to be good. 

Instead of using a sous-vide machine, you just pour boiling water into the bottom of a baking sheet and add the egg-filled muffin tin on top. That way, they steam and cook slowly without developing an uneven texture. But don’t make Garner’s mistake when adding the boiling water. 

“Note to self: put this in the oven and then pour in the boiling water,” she says.

Once the egg bites start pulling away from the sides, you’ll know they’re ready. If you want them to be a little crispier on top, the way Garner likes them, you can broil the egg bites for a few minutes until golden brown.

Garner says the “very good” egg bites store well in the fridge, so you can just reheat them in the microwave whenever you’re ready to eat them. You can also freeze the egg bites for up to two months. 

We sure hope one of Garner’s New Year’s resolutions is to make more “Pretend Cooking Show” episodes because with easy recipes like these, we want to cook like her all year long.
