Exactly what it sounds like, these Cookie Dough Ice Cream Bites are our new go-to frozen dessert, so delicious! Made with homemade cookie dough, creamy french vanilla ice cream, and a sweet chocolate shell. These are going to be everyoneâs favorite easy frozen treat!
You all! I looked at the calendar a few days ago and was shocked that we’re basically a week away from Memorial Day. How did that happen? This month flew by. It felt long, but at the same time, I just blinked, and now it’s almost summer!
Wow, I’m excited! I really need those long days, warm nights, sunshine, and humidity – I love it all. I’m so excited for summer.
There’s no better way to celebrate summer than with ice cream. There’s just something special and magical about ice cream.
When I realized how close Memorial Day was, I immediately started plotting out ice cream recipes. The cookie dough blizzard from DQ was always a childhood favorite, and my sister-in-law, Lyndsie, is always, always, begging me to make anything cookie dough; it’s her favorite.
With Lynds in mind, I thought, what’s something yummy with cookie dough that I could share? These mini bites came to mind. How delicious? A layer of homemade cookie dough, then vanilla ice cream, and a chocolate shell.
You can’t go wrong!
These are the details we all need
Step 1: make the cookie dough
This is my favorite dough, itâs egg-free, low-sugar, and yet so yummy. Youâll need almond flour (you could also use oat flour), cashew butter, honey, butter, vanilla, and mini chocolate chips.
Mix everything together all at once in the same bowl. Nothing fancy or special about the process.
I adore this cookie dough. The cashew butter is the secret. I swear, all by itself, it already tastes like cookie dough!
Step 2: assemble
Ok, now, line a square baking pan with parchment paper. Press the cookie dough into the bottom of the pan. Freeze it for a few minutes. Then, layer on a thick layer of vanilla ice cream, then freeze again.
You want to freeze the bars really well, so freeze for at least 4 hours, but if you can, overnight is best.
Step 3: cut and dip
Next, cut the slab of ice cream into tiny bite-size squares. Cut anywhere from 32 to 48 squares. Working as quickly as you can, line the squares on a baking sheet, then freeze until they firm back up. I recommend an hour, but again, overnight would be great.
The colder the ice cream is, the easier the dipping process goes.
Oh! And if you want to, at this point, you can insert a popsicle stick into the ice cream. I will say that the sticks make the chocolate dipping process really easy, but they’re also not necessary.
Step 4: cover in chocolate
Once frozen, dip each square into melted chocolate and sprinkle with sea salt (if desired). Freeze to chill the chocolate, then keep these stashed away in the freezer.
You can enjoy these straight out of the freezer at any time. They’re the perfect two-bite frozen treatâcreamy, sweet, salty, and literally perfect!

1. To make the cookie dough. Mix all ingredients except the chocolate chips in a bowl or in a food processor. Mix in the chocolate chips.2. To make the bites. In a microwave-safe bowl, melt together the chocolate and coconut oil. Dip each bite in chocolate. Sprinkle with sea salt (if desired). Freeze until completely frozen, 2 hours.
