It’s peak soup season, and Bobby Flay has a brothy, cozy recipe that you need to try on your next snow day. In a recent Instagram video, the Food Network star shared one of his go-to comfort recipes: Winter Tonic.
“This is a very well-flavored chicken soup or chicken broth,” Flay says in the clip. “We’re going to bring flavor to the game here.”
This golden sippable soup is packed with immune-boosting ingredients, so it’s ideal to make ahead of time for cold and flu season. Learn how to make this soup, plus find more immune-boosting recipes to try below.
After slicing up shallots, garlic and shitake mushrooms and grating ginger and turmeric, Flay throws his prepped ingredients into his Dutch oven on low heat. With a drizzle of avocado oil, he stirs the aromatics before pouring in sake, a Japanese wine made with fermented rice.
“I love sake,” Flay explains. “You can cook with it too, or you can drink it on the side… When I cook the sake in a dish like this, for some reason I can taste it more than a traditional kind of wine.” (Check out our editors’ sake picks if you’re not sure where to start!)
Once simmering, Flay pours in chicken bone broth to build the liquid base, stirring the ingredients in the broth. He then adds in a drizzle of tamari, a splash of sesame oil and a big spoonful of white miso.
“The miso is going to give that nice fermented flavor: a little sweet, a little tart,” the chef says. After giving the broth a whisk, Flay lets the soup simmer for 15 to 20 minutes to help the flavors “meld together.”
The result? A gorgeous golden bowl that “smells so good and is good for you.” Flay throws in fresh herbs like scallions and cilantro to his soup for added brightness. In his bowl, he splashes a little bit of chili oil on top, which is on-brand for the Beat Bobby Flay host.
Ingredients like ginger and turmeric have immune-supporting benefits especially when paired together: they’re anti-inflammatory, can help soothe your stomach by reducing nausea, are rich with antioxidants and have proven immune-strengthening properties. There are so many ways to try this healthy combo, including in these brand-new Orange-Carrot Turmeric Ginger Shots, our Turmeric-Ginger Tahini Dip or, of course, in Flay’s brothy soup.
“Looks like the perfect comfort soup for a cold day,” one fan writes. We totally agree, and Flay even says this soup tastes better the next day, so freezing it ahead of time for quick meal prep is exactly what you’ll need this season.
