BBQ Salmon Curry with Mango Avocado Salsa. This dish has flavorful Thai curry paste, creamy coconut milk, and a quick homemade BBQ seasoning blend. The salmon is seasoned, broiled until crispy, and then served with a creamy curry sauce. I’ve mixed up my homemade mango salsa to complete this summery BBQ salmon. It’s so delicious with a side of rice to soak up all that yummy curry sauce.
Something I love to do is switch up recipes. I love combining flavors that are not traditional and having fun with flavors. This salmon is such a great example of that: a simple BBQ seasoning blend paired with a Thai curry sauce. Not something you might see daily, but so delicious.
And I love how this recipe came to be. I started out with a simple BBQ salmon idea. After that fell flat, I was ready to scrap the whole thing. But then I had the idea to combine the salmon with a curry sauce for even more flavor. I thought it could be so good!
And it is so good! I had fun with this recipe.
The salmon is seasoned with my homemade BBQ seasoning blend and quickly broiled. The sauce, made with coconut milk and curry paste, is very creamy.
For color, add a quick mango salsa! This is my ideal summer dinner, and you can make it any night of the week!
Here are the quick details
Step 1: season the salmon
For the seasoning, I used one of my go-to blends: chili powder, chipotle chili powder, smoked paprika, garlic powder, and onion powder. It’s smoky with just enough spice.
The key is the smoked paprika. I love the flavor this adds! Rub the salmon down with the spices, then add olive oil.
I like to thread the salmon onto skewers, but this is totally optional. I do think it’s fun, though!
Step 2: cook the salmon
I cook the salmon under the broiler to crisp it up. Usually, about 5-8 minutes is just enough time. Be sure to watch the salmon closelyâthe broiler can work quickly!
Step 3: Make the curry sauce
I start with butter, then garlic and Thai red curry paste. I add a can of creamy coconut milk and season with tamari and lots of fresh cilantro.
Not too many ingredients, but the curry paste really adds a good amount of the yummiest flavor!
Step 4: finally make the salsa
This is my favorite salsa. Mangos, avocados, shallots, fresh cilantro, fresh basil, lots of lime juice, and just a touch of honey. Then some sea salt.
Mix this all together.
Step 5: build your bowl
I always start with rice, it’s essential for soaking up all that yummy curry sauce. Jasmine is my favorite.
I then take the salmon skewers, add lots of curry sauce, and finish each bowl off with spoonfuls of fresh salsa. It’s such a pretty bowl!
This is the perfect (non-boring) recipe to keep things fun during the week. Lastly, a side of fresh, warm naan is especially delicious with this creamy curry sauce. Just an idea!

1. Preheat the oven to 500° F or high broil.2. On a baking sheet, toss the salmon with olive oil, paprika, chili powder, chipotle chili powder, garlic powder, onion powder, and a pinch of salt. If desired, thread the salmon onto skewers. Arrange in a single layer. Broil until the salmon begins to crisp, 5-8 minutes, watch closely.3. In a large skillet over medium heat, melt together the butter, garlic, and curry paste. Cook for 2-3 minutes until very fragrant. Add the coconut milk and tamari. Mix in a handful of chopped cilantro and or basil. 4. To make the salsa, combine all ingredients in a bowl.5. Serve the salmon and curry sauce over bowls of rice. Top with salsa.
