I love to bake this easy Apple Nut Bread and my crock pot applesauce after apple picking. Cinnamon and apples baking in the oven make my kitchen smell like fall. The warm spices, the sweetness of fresh apples, and the crunch of walnuts create a delightful bread that will put you in the fall spirit. It makes the perfect cozy breakfast treat or afternoon snack. - Apple: You can use any apples you like, but Honeycrisp and Gala are the best for baking are since they’re naturally sweeter, you won’t have to add as much sugar. Pink lady, Golden delicious, Braeburn or Granny smith apples can also be used.
- Apple Marinade: Let the diced apples sit in a mixture of lemon juice, agave, and cinnamon to enhance their flavor. Granulated sugar can replace the agave.
- Applesauce: I think this apple walnut bread is so much better with homemade applesauce, so if you have lots of apples, check out my easy slow cooker applesauce recipe. If you buy pre-made, choose an unsweetened applesauce.
- Flour: Use white whole wheat flour for extra protein and fiber. All purpose flour will also work.
- Brown Sugar: For sweetness, I have also tested this with monk fruit brown sugar with great success.
- Baking Soda helps the bread rise.
- Spices and Extract: Cinnamon, nutmeg, allspice, vanilla extract
- Salt improves the flavor and texture of the apple nut bread.
- Oil: The only fat in this bread is two tablespoons of vegetable oil.
- Eggs: You’ll need two egg whites.
- Nuts: Chop 1 ½ ounces of walnuts.
How to Make Apple Bread
Here’s the step-by-step recipe for this apple cinnamon bread. See the recipe card below for the exact measurements.
- Diced Apples: Combine the apples, cinnamon, agave, and lemon juice in a medium bowl and set aside.
- Prep: Preheat the oven to 350°F and spray a 9-x-5” loaf pan with baking spray.
- Dry Ingredients: Whisk the flour, baking soda, nutmeg, remaining cinnamon, allspice, nutmeg, and salt in a medium bowl.
- Wet Ingredients: With a hand or stand mixer, beat the oil, egg whites, sugar, applesauce, and vanilla in a large mixing bowl at medium speed until thick. Scrape down the sides of the bowl.
- Pour the flour mixture into the wet ingredients and beat on low speed until combined. Be careful not to overmix the batter.
- Apples and Walnuts: Gently fold in the diced apples and walnuts.
- Bake: Pour the batter into a loaf pan and bake on the center rack for about 55 minutes or until a toothpick inserted in the center comes out clean. Let the pan cool for at least 20 minutes before slicing. If you cut it before the bread cools, it may fall apart.
Variations
- Nuts: If you’re not a fan of nuts in your bread, omit them. You can also swap them for pecans.
- Oil: Substitute vegetable oil for canola or coconut oil.
- Agave: Swap honey or maple syrup for agave.
- Gluten-Free Bread: Sub a gluten-free flour, like Cup4Cup.
- Flour: If you don’t have white whole wheat flour, use all-purpose or whole wheat.
- Muffins: Make apple nut muffins and bake them for 22 to 30 minutes. Check them with a toothpick to make sure they’re done.
How to Store Apple Nut Bread
Store this moist apple nut bread in an airtight container on the counter for a day or in the refrigerator for up to a week. You can also keep in the freezer for up to three months. To freeze, slice the loaf and wrap the pieces individually in aluminum foil or plastic wrap and store them in a large zip-locked bag. Thaw the slices in the refrigerator and warm in the microwave for about 30 seconds.
