Al Roker can bring you the weather, news, and friendly banter on NBC’s “Today Show,” but he also knows his way around a kitchen. The multi-talented personality recently released a new cookbook, “Al Roker’s Recipes to Live By,” with his daughter Courtney Roker Laga.
Even before that cookbook, we’ve been paying attention to what Roker eats and cooks, whether it’s a four-ingredient tomato sandwich with a surprise ingredient, or a favorite snack, like Trader Joe’s Dark Chocolate Peanut Butter Cups.
Roker recently visited Melissa Ben-Ishay of Baked by Melissa in her kitchen to demonstrate how he makes fluffy chocolate chip pancakes, and she seemed as delighted as her online audience was by her guest.
Al Roker’s Fluffy Chocolate Chip Pancakes
“It’s so easy; you don’t even have to use a mixer,” says Roker as he begins combining the recipe ingredients. The pancake mix contains no surprise ingredients, but there is a bit of a surprise concert as he sings about what he’s doing while switching up the lyrics to “Lime in the Coconut.” It’s pretty entertaining to watch.
“This is THE best thing I’ve seen on the internet today! We all need a little more of Al,” one of Melissa’s followers said. Others loved the pair working together, saying things like, “The duo I never knew I needed!!!”
We didn’t know we needed Roker and Melissa together either, but now that we’ve seen them, we wouldn’t be mad if they teamed up regularly.
How to Make Al Roker’s Chocolate Chip Pancakes
The complete recipe can be found in Roker’s cookbook, but he did give an overview in the video. You’ll start by whisking together the dry ingredients in a bowl, followed by the wet ingredients. The mixture will be thick, but it’s important not to overmix!
Add portions of the batter to a preheated griddle pan or skillet, working in batches. Flip when the top bubbles a little and continue to cook until the batter is cooked through.
Serve with butter and maple syrup. To “bring out flavor,” and to Al’s surprise, Melissa sprinkles just a little salt on her stack of pancakes before they taste them.
“It’s drop-the-fork delicious,” declares Melissa after she takes a bite. Roker adds an enthusiastic “Yummy!” They do look yummy, and we’re looking forward to the next lazy morning we get to make pancakes and give them a taste test ourselves.
