If your fridge is packed with the last of your summer produce, and you’re not too sure how to use it up, we found the perfect recipe for you. Today show correspondent and registered dietitian Joy Bauer just shared her easy corn salsa recipe that looks so delicious, we could eat it by the spoonful.
“This corn salsa makes everything taste better, from salads to tacos, and of course tortilla chips and veggies,” Bauer says in her latest Instagram post.
Here is how to make the dietitian’s nutritious corn salsa that’s “so darn good,” and it’s more simple than you might think.
All you need is five ingredients to whip up this dip: 2 cups of corn kernels, 1 cup of quartered cherry tomatoes, 2 sliced jalapeños, 1 cup of diced red onion and 2 to 3 tablespoons of lime juice. Seasonings like cilantro, cumin, smoked paprika, salt and pepper are entirely optional.
Bauer grills her corn before cutting it off the cob and mixing it with her diced veggies and lime juice. Then, stir the ingredients together in a bowl and add your preferred seasonings to taste. It really is that quick, and it’s an easy way to use up any leftover cooked corn on the cob. And this recipe is completely customizable, so add in your favorite summer flavors for your ultimate bite.
This recipe is incredibly nutritious, which is no surprise as it’s curated by a dietitian. We love that it’s low in saturated fats, sodium and features ingredients like corn and tomatoes to make it a heart-healthy dip.
