Katie Lee Biegel Shares Her “New Favorite” Cabbage Dish

Cabbage may be the most underrated vegetable. It’s so versatile as it’s a great base for salads, makes a delicious plant-based main and it’s a delicious addition to your favorite comforting soup. Plus, the cruciferous veggie is packed with antioxidants like vitamin C, anthocyanins, sulforaphane and more, which can help reduce inflammation, support immune function and improve eye health. 

Safe to say, cabbage is a star, and Katie Lee Biegel agrees. In a recent Instagram video, Biegel shared a cabbage recipe that she declares is as delicious as it looks. 

“Brown Butter Maple Miso Cabbage might just be my favorite new recipe that I’ve created in a long time,” Biegel shared in the Reel caption. Here’s more on why she loves this vegetarian dish and why you should try it immediately—plus more cabbage recipes to give a taste.

You only need 5 key ingredients to recreate Biegel’s Brown Butter Maple Miso Cabbage, alongside salt, pepper and oil. Here are the measurements provided in her newsletter:

  • 4 tablespoons unsalted butter 
  • 3 tablespoons maple syrup
  • 3 tablespoons white miso paste 
  • 3 cloves garlic, minced 
  • 2 tablespoons extra virgin olive oil 
  • 1 medium head green cabbage, cut into 2-inch wedges 
  • Kosher salt and freshly ground black pepper, to taste

After browning the butter in a saucepan, Biegel adds in her miso paste and maple syrup, stirring “gently” until the liquids are combined. Reducing the heat, the Food Network star mixes in the minced garlic. Once the miso is dissolved in the butter, she sets the mixture aside and starts preparing the cabbage wedges.

In a large oven-safe skillet with olive oil on medium-high heat, Biegel cooks her cabbage wedges, turning them until each side is golden brown. After seasoning with salt and pepper, she brushes half of her sweet and nutty brown butter-miso sauce on the cabbage. In a 400ºF oven, Biegel bakes the cabbage for 20 minutes and then repeats the process, taking the cabbage out of the oven, brushing the rest of the sauce on it and baking it for another 15 to 20 minutes.

The result is a gorgeous, comforting dish that is as tasty as it smells. The Kitchen co-host explains why the marriage of these flavors go so well together.

“The brown butter adds a nuttiness that’s perfect with the sweetness of the maple and the miso adds such depth of flavor,” she says. “The bitterness of the cabbage mellows out as it’s roasted and I just could not stop eating it.” Outside of the tofurkey, Biegel recommends this dish as a vegetarian main course option for Thanksgiving this year, and it’s a simple yet glamorous recipe that your guests will appreciate.
